revert: restore err.message in gateway/bridge unhandled error handlers

Phase F had replaced 5xx bodies with generic 'Internal error'. Revert so JSON errors show the real message again (helps debug OAuth and other 500s). Docs: Phase F row updated to note revert.

OAuth routes (/auth/login, Passport) were never modified in that change; this only affects the catch-all error middleware response body.
