docs(spectral): remove gradient headers, add braces icon
- Hero heading and section headers no longer use gradient text fill - Remove gradient-on-surface and gradient-as-text demo blocks - Add braces ({}) icon to sprite and catalog alongside existing code (</>) - code = angle brackets for source code; braces = curly braces for blocks/JSON - symbols icon already existed, now documented alongside code and braces
