revert: keep pyproject.toml in canonical PEP 440 form

Mirrors the musehub revert: PEP 440 and SemVer have incompatible canonical pre-release forms, so a hyphenated version string here breaks the hatchling-built tarball filename that publish_muse_release.sh expects. Keep pyproject.toml in the form the build tooling produces.
