docs: use muse switch instead of checkout for branch navigation/creation

Update the canonical agent pattern and all branch-flow examples to use muse switch / muse switch -c, which muse's own --help describes as the cleaner, branch-only alternative to checkout. Leave checkout untouched everywhere it's still correct (--ours/--theirs conflict resolution, checkout-symbol, sparse-checkout).
