docs: align Netlify monorepo routing with repo config

- DEPLOY-HOSTED: root catch-all [[redirects]] removed on purpose; bridge uses deploy/bridge netlify.toml + USE_BRIDGE_FUNCTION; note gitignored public/_redirects. - BRIDGE-DEPLOY-AND-PREROLL: two-site setup, same build, routing via _redirects + bridge toml. - CONNECT-GITHUB-AND-STORAGE-CHECK, STATUS-HOSTED-AND-PLANS: correct bridge vs gateway wording. - hub gateway/bridge READMEs + netlify-redirects.mjs header: cross-links and operator notes.
