fix(bridge): path-stripping middleware + :splat redirect script

- hub/bridge: strip /.netlify/functions/bridge prefix in serverless so routes match - Add temporary [bridge] path logging for verification (remove after confirming) - scripts/netlify-redirects: use :splat for bridge line, add build assertion
