fix(netlify): externalize exceljs for bridge serverless bundling

Mark exceljs as an external node module for the bridge function only so @netlify/zip-it-and-ship-it esbuild does not inline the full dependency tree, which can fail the deploy (opaque exit 1; Netlify can then throw in error formatting). Mirror the setting in deploy/bridge/netlify.toml for the bridge site.
